These cute snowman cake pops are a sweet Christmas treat and are so easy to make! They'll be sure to impress your guests but are deceptively simple to make using leftover cake, delicious Oreos and white chocolate.

  • 100 grams white chocolate
  • 35 mililitres double cream
  • 10 vanilla muffins/equivalent leftover cake
  • 8 Oreo cookies
  • 400 grams white chocolate (2 1/2 cups approx)
  • 50 grams dark chocolate for the decoration
  • Gummies or sprinkles for the snowman nose

Instructions

  • The first job is to make the chocolate ganache. Break the white chocolate into small chunks and put in a bowl. Put the double cream in a saucepan and bring to the boil before pouring over the white chocolate. Stir the mix until it's combined and then set aside. Don't let this set too hard – you want it to be the consistency of peanut butter so you can mix it into the cake crumbs
  • While the ganache is cooling, place the Oreo cookies in a food processor and pulse until fine crumbs are formed. Set aside. If you don't have a food processor, you can put the cookies into a sandwich bag and bash them with a rolling pin until they're in the fine crumb stage.
  • In a large bowl, crumble the vanilla muffins with your hands or a fork until they form small crumbs.
  • Add the processed Oreo crumbs to the muffin crumbs. Add the ganache, a little at a time, and mix everything with your hands until a homogeneous dough forms that is easy to shape into a ball.
  • Divide the mixture into 16 equal portions and shape them into balls with your hands. Pop them on a tray and into the freezer for 10 minutes to firm up.
  • Thread two balls onto each stick or straw to form the snowman’s body.
  • Pop them back into the freezer, and freeze for at least 1 hour, or until they are well chilled and firm.
  • Melt the white chocolate in the microwave or over a double boiler (bowl over a pan of simmering water). Once melted, dip each cake pop in the white chocolate, making sure to coat the balls completely.
  • Let the white chocolate dry completely before decorating.
  • Melt a small amount of dark chocolate and, using a piping bag or toothpick, draw the snowman’s eyes, mouth, and buttons. Place a gummy or sprinkle for the snowman’s nose.
  • Put the decorated cake pops in the refrigerator so the chocolate can fully set and harden, then you can enjoy your festive snack!
